Like any other profession, a baker requires certain qualities to qualify as a good baker.

We have consolidated a list of qualities for individuals aspired to be a good baker:

· Passion and good leadership

· Good numerical skills

You will need to measure ingredients, order ingredients that are needed and plan cooking times extensively therefore being good with numbers is an added bonus.

· Creativity

Anyone can bake but to stand out from your competition, the element of creativity is necessary as you are able to offer something different from the crowd.

· Able to work under pressure

Baking is a lot about timing, timing and timing. It is important to grasp the right timing that may cause unnecessary stress. The ability to face the immense amount of stress when the end product does not turn out as expected.

· Good organisational skills

This is essential to keep your ingredients in check and to prevent the kitchen from turning into a warzone every time you bake. Baking can be a tricky thing with so many nitty gritty things to take note of but with good organizational skills, baking will be a breeze.

· Awareness of safety and hygiene rules

Not only should your baking creations taste good, they should also reach strict hygiene standards. You want the people who consume your food to stay safe too. Some countries (especially Singapore) have stringent rules on food safety and hygiene that you should be aware of.

· Reasonable level of physical fitness

As per every job, you need to be physically fit to carry out the job tasks. Baking also consists of carrying heavy trays laden with baking goods and sacks of flour and sugar etc. All these carrying require a fit body to carry out.

· The ability to work in a team

Teamwork is extremely important in a kitchen. You need to be able to work with other people to make beautiful creations on a large-scale. Communication with your team members ensures that things are done efficiently and quickly as well.

· Perceptiveness

This will allow the baker to be sure of the exact mass he/she wants to produce the desired baked goods.

· Time consciousness

This attributes to the ability to carry out and meet orders within the designated time frame.

You need to be able to express your intentions to the people working with you. Clarity is key as one tiny mistake will contribute to the imperfection of the final product.

A baker does not just bake goods but has to take on many different responsibilities. Just like how a teacher does not just teach but has to helm administrative duties, a baker has to learn to work with other people besides just knowing how to bake.

Can You Freeze Tiramisu?

The question often comes up as to whether or not you can freeze tiramisu cake dessert or save it in the refrigerator. Of course tiramisu tastes best when fresh but the good news is yes, you can freeze tiramisu. In fact, I personally prefer when it is made 1 to 2 days ahead and stored in the refrigerator where the flavors are allowed to mix together a bit and to mature. Not to worry, it will keep for up to 4 days in total. Leftovers (if there are any) should be refrigerated immediately though.

Once assembled, the tiramisu can be frozen until you are ready to serve it, in case you are not serving it immediately. An article on the Food Network website suggests “The tiramisu can be frozen for up to 3 months. Wrap the tiramisu (without hazelnut and cocoa topping) in double layer of plastic wrap and layer of aluminum foil. Thaw overnight in refrigerator and top with nuts and cocoa.” Though this may certainly work I have not been able to keep any around for that long so can not confirm that length of freeze time. This is always a very tasty dessert and doesn’t last long in my home. If you do, please let us know.

As far as the individual components are concerned, you can make your ladyfingers or savoiardi well in advance as since they are simply light and sweet sponge cakes roughly shaped like a large finger they can be frozen in the freezer and thawed when ready for use. They are typically soaked in a sugar syrup or liqueur, such as coffee for the tiramisu dessert. The coffee you use should be cool anyway and you can feel free to store it in sealed plastic containerin the refrigerator. In fact in my opinion, if the ladyfingers are just a little stale all the better. They seem to soak up the liquid a little better this way.

There is much debate within the pastry and dessert community as to how long you can actually store your tiramisu and if you should freeze it at all. Keep in mind there are companies who ship frozen tiramisu so you should feel confident in the fact yours will be just fine chilled or frozen. Although I wonder how long you will be able to last before you succumb to the delicious dessert every time you open the freezer or refrigerator door?

Make sure the main course is made up of salads, pasta, meat, and fish. Get schooled on the Feast of Seven Fishes

The Feast of Seven Fishes, or the Festa dei Sette Pesci, is the traditional dinner that many southern Italian and Italian-American families will sit down to this Christmas Eve. (It is also one of the few appropriate times to pluralize fish as fishes.)

The significance of the number seven reels in many different theories: Some families say it’s for the seven sacraments of the Catholic Church, others say it’s for the seven hills of Rome, and still others say it represents the days of creation or stands as a reminder of the seven deadly sins. Other families’ traditions even allow for 10 or even 14 different aquatic dishes.

And just as the numeric explanations are allowed loose translations, so are the types of seafood served. The true meaning isn’t in the number or kind you choose, but with whom you decide to share your feast.

This Christmas Eve, Alex Guarnaschelli, chef of Butter in New York City and Food Network star, encourages you to serve the humble sardine atop lightly fried cauliflower, an ode to her mother’s Sicilian roots.

Fresh sardines – not the pungent, little canned guys – are delicious, inexpensive and sustainable, three wise choices for this holiday season.

Grilled Sardines with Cauliflower Fritters
Serves 6-8

For the cauliflower:
1 1/2 cups all-purpose flour
2 teaspoons canola oil, plus 1 quart for frying
Kosher salt to taste
2 teaspoons red pepper flakes
1/2 teaspoon ground coriander
18 ounces (1 1/2 bottles or 2 1/4 cups) pale lager beer
1 large head cauliflower, stem removed, cut into bite-size florets
1 tablespoon smoked hot paprika

For the sardines:
18 fresh sardines*, scaled, gutted, rinsed and patted dry
1/4 cup loosely packed basil leaves
1 lemon
1 tablespoon extra virgin olive oil, plus 3 tablespoons for dressing
1/2 to 1/4 small jalapeño, sliced into thin rings (about 15-20 rings total)

Preheat the grill.

Arrange the sardines in a single layer on a baking sheet and rub sparingly with 1 tablespoon olive oil (too much oil will cause them to flame on the grill) and season on both sides with salt. Set aside.

In a medium bowl, combine the flour, 2 teaspoons canola oil, a generous pinch of salt, red pepper flakes and coriander. Stir to blend. Whisk in the beer. Set aside in a warm place. Like bread dough, it will puff up slightly.

Arrange the cauliflower pieces in a single layer on a baking sheet. Put the paprika into a small strainer and dust the cauliflower with an even layer of the paprika.

In a large, deep pot, heat the remaining 4 cups canola oil to 375 degrees Fahrenheit. Monitor the temperature of the oil with a thermometer. Prepare a baking sheet or plate fitted with paper towels to drain the florets as they come out of the oil.

Stir the batter slightly. To test the consistency of the batter and the temperature of the oil, put a piece of cauliflower on a slotted spoon and submerge it in the batter. It should coat the piece lightly but completely. (If the batter is too thick, add a little water to thin it out. If the batter is too thin, sift and whisk in a little more flour.)

Dunk a cauliflower floret in the batter, shaking off the excess, and lower it into the oil. It should bubble slightly and the cauliflower should gradually rise to the top. Fry until light brown, about 2 to 3 minutes, and transfer to the towel. If the batter doesn’t form a thin, crisp shell, don’t be afraid to drop it back in the oil and fry for an additional minute. After the test floret, fry the cauliflower in small batches; drain on paper towels. Season with salt while the cauliflower is still hot.

Place the sardines on the medium-hot grill until they start to lightly char, 2 to 3 minutes. Use a metal spatula to gently flip them over; grill the sardines on the other side for 1 to 2 minutes until cooked through. Check the interior of one to make sure it is cooked through without being dried out. Top with basil leaves.

Arrange the cauliflower pieces on a large serving platter, and top with the sardines.

In a small bowl, whisk the juice from 1 lemon with the remaining 3 tablespoons olive oil and jalapeño slices. Drizzle over everything. Serve immediately.

*Note: If you can’t find fresh sardines, mackerel, trout or even bluefish can be used as a substitute.
